Whether you're a beginner chef building confidence or a regular home cook who wants to polish their technique, this is the class for you. Learn to slice, dice, chop and fillet with expert guidance from a talented chef.
We have been working with high quality Wusthof knives for many years and are now delivering our Knife Skills classes in partnership with Wusthof. We want only the best knives for our chefs and students that are beautifully crafted, made to last and made to support you in your culinary adventures. With good care and attention, your knives can last a lifetime.
Thanks to our partnership with Wusthof, included in the cost of the class is a Classic Asian Utility Knife. This 12cm knife can be used as a small chef’s knife and as a paring knife which is incredibly useful. What’s more, it is great value and usually retails at £49.00. The knife will be available to take home at the end of the class.
Over nearly 3 hours, you will learn the tricks of the trade, understand the importance of the right knife for the job, and plenty of safety tips. Your culinary adventure starts with a snack of freshly baked treats and then you'll dive into the chopping.
During this cooking class, you will
  • Master the art of wielding a kitchen knife.
  • Pick up some tips and tricks for using standard home kitchen equipment.
  • Get plenty of hands-on practice.
  • Use sustainably sourced, high-quality, mostly organic ingredients to make your dishes.
  • Forget the washing up! That's taken care of for you.
  • Have a recipe pack sent to your email address after the class.
You will be working with Wusthof during this class, which is also available to purchase. You'll get hands-on with knife work and then learn how to transform your freshly chopped ingredients into delicious dishes.
At the end of this tasty London activity, you will all gather around the Cookery School table to enjoy all that you have chopped and cooked. You'll then leave this class with a new repertoire of knife skills that you can use time and time again.
Sample menu: (subject to change due to seasonality and availability)
  • Minestrone with pesto (loads of chopping of all sorts).
  • Caramelised onion focaccia (slicing onions easily).
  • Grilled catch of the day with a herbed topping (filleting and fine chopping).
  • Fresh oranges with Grand Marnier (segmenting citrus fruits).
  • Wonderful apple cake (cutting up apples).
Please note:
This class uses induction hobs. If you use a cardiac pacemaker or electrical implant you are recommended to remain a safe distance from the hobs.

In 2003 Rosalind Rathouse decided to set up her own cookery school. What makes her qualified to run a cookery school? The answer is twofold: 50 years of teaching experience plus a passion for food and cooking. This passion led to her founding Piemaker in the 80s -- a maker and supplier of wholesale pies and cakes to the likes of Harrods, Waitrose and the Orient Express.
With the decline in people passing down home cooking through the generations, in 2003 Rosalind decided to combine her enthusiasm for teaching and her love of food to open Cookery School at Little Portland Street. The lasting principles of classic, simple home cooking are embedded in the school’s ethos even today. Rosalind feels very strongly that proper teaching can enthuse even the most unconfident cook. By 2008, the school was thriving, with fully booked classes, courses and corporate events gaining in popularity, so Rosalind took on a second, much larger, kitchen in the same building.
Even before the inception of the cookery school, Rosalind has been fervently passionate about sustainability. Cookery School has the highest possible rating for sustainability from the Sustainable Restaurant Association (SRA) and has been virtually plastic-free since the beginning. Sustainability is not just a buzzword but runs through the veins of the school, from sourcing top quality, seasonal, mostly organic ingredients, to running the kitchens on renewable energy, the school does everything possible to minimise its impact on the planet.
