In 2003 Rosalind Rathouse decided to set up her own cookery school. What makes her qualified to run a cookery school? The answer is twofold: 50 years of teaching experience plus a passion for food and cooking. This passion led to her founding Piemaker in the 80s -- a maker and supplier of wholesale pies and cakes to the likes of Harrods, Waitrose and the Orient Express.

With the decline in people passing down home cooking through the generations, in 2003 Rosalind decided to combine her enthusiasm for teaching and her love of food to open Cookery School at Little Portland Street. The lasting principles of classic, simple home cooking are embedded in the school’s ethos even today. Rosalind feels very strongly that proper teaching can enthuse even the most unconfident cook. By 2008, the school was thriving, with fully booked classes, courses and corporate events gaining in popularity, so Rosalind took on a second, much larger, kitchen in the same building.

Even before the inception of the cookery school, Rosalind has been fervently passionate about sustainability. Cookery School has the highest possible rating for sustainability from the Sustainable Restaurant Association (SRA) and has been virtually plastic-free since the beginning. Sustainability is not just a buzzword but runs through the veins of the school, from sourcing top quality, seasonal, mostly organic ingredients, to running the kitchens on renewable energy, the school does everything possible to minimise its impact on the planet.

This was a very enjoyable and informative day. We learned so much about the preparation and the different methods of cooking fish. Great too to learn how to make so many accompanying sauces. John was a good instructor, maintained a good structure and pace. I enjoyed eating it all!

The course was a little too basic for me. General chopping skills were as I already do.
I had not previously filleted a fish and was pleased to learn how to do that.
I was also grateful for learning how to make my own pesto and the burger preparation using chopped steak.
On the cooking side, I prefer more seasoning with the meat and fish but both were succulent.
I appreciate that you try to use all of the food chopped by the class, but this led to too much onion on the foccacia and too much apple in the cake which detracted from the cooking of both.
The atmosphere was jovial and inclusive.

Thank you for your review, Les. We are pleased that you did pick up some knife skills that were useful but sorry that you found the course a little too basic. We try hard to avoid anyone booking a course that is not at an appropriate level by describing in detail what any particular class covers. We try to learn from feedback that we receive on reviews and in our next update of classes intend offering an advanced knife skills class where we will offer filleting a round and a flat fish as well as learning how to debone a chicken. Seasoning is always tricky as different people like different levels of seasoning and that is why we always offer additional salt and pepper when food is served. We saw both the apple cake and focaccia and thought that both were delicious and well baked but again understand that this can depend on personal taste too. We would like to invite you to join the advanced knife skills class once it is on our website so will be in touch with you then.

The sauces class my wife & I took part in was much more than we'd hoped for. Chef John and his assistant were absolutely brilliant - engaging, funny, knowledgable and very relatable as well. No question was too silly, and he taught us some great kitchen hacks that we've transferred to using in our daily lives. The recipes we did, which were quite a few, were very accessible and thanks to the detailed recipes we were emailed, we will continue to use the techniques we were taught and make our own sauces from now on. I don't think we'll ever buy pesto again! This class was well worth the money, and we would definitely come back for more skills in the future!

I recently had the pleasure of attending a knife skills class lead by “John”, and I must say, it was a great experience. From the moment I stepped into the well equipped kitchen space, I knew I was in for a treat. The instructor’s passion for the subject was palpable, and his expertise shone through as he guided us through the fundamentals of knife handling with clarity and patience. The class seamlessly combined safety, technique and hands on practice. The inclusive atmosphere made learning enjoyable. And at the end of the class we got to enjoy a lovely meal prepared with all the ingredients that we practiced on. Highly recommended for culinary enthusiasts of all levels.

The class was great! The teacher was a great professional, he taught us a great variety of dough and most importantly it all was very fun. Great environment, a great vibe, and an amazing smell. Everything came out of the oven delicious. I'd recommend this class to everyone who wants to have a start in the world of bread-making. And of course, you get all the bakes left and can bring it at home! Approved!

This was such a great experience! I always wanted to learn how to make croissants and in this class they even teach us different ways to use the dough and get creative with it. Everyone was really nice, they gave us scones and tea or coffee for breakfast when we arrived, and we got to try everything that we prepared, as well as take a bag full of pastries back home and the dough we prepared. I was so excited the next morning to prepare some fresh croissants and my house smelled amazing. Definitely recommend this class!
