Master delicious, regional Italian bakes from bread to biscuits at this fun and hands-on baking class in Leeds!
During your class, you'll learn how to bake two classic Italian breads; focaccia and a super-easy no-knead ciabatta.
You'll learn how to work with high hydration doughs, how to mix dough in a food mixer correctly, the technique of stretch and fold and how to proof, shape and bake your bread.
Guided by expert baking tutors, you'll also learn how to top and dot your focaccia with the right seasonal toppings and how to make a classic breakfast enjoyed in Rome called Maritozzi (If you watched Stanley Tucci's fantastic food tour of Italy programme on TV you may have seen them). To top things off, you'll learn how to make a delicious brioche dough and a sweet fresh cream filling.
After your baking, enjoy a tasting session and the chance to sample your tutor’s version of each item. You'll take home everything you make along with the recipes for your bakes so you can recreate them independently.

  • Ciabatta (your chef tutor will demonstrate this).
  • Focaccia.
  • Maritozzi.
  • Amaretti biscuits.

This cookery school uses induction hobs so if you have a pacemaker fitted please get in touch with your teacher so they can adapt the equipment to meet your needs.

Across our range of classes, courses and events at Leeds Cookery School our teachers promote and talk about seasonal ingredients, local sourcing and the importance of eating ethically and sustainably. Our ingredients are sourced from Yorkshire and are sustainable wherever possible and we always use free-range eggs. We order small quantities to minimise wastage and always consider the food miles travelled by our ingredients.
As well as donating profits to Zest, Leeds Cookery School has committed to running affordable cooking activities throughout the year, in partnership with Jamie’s Ministry of Food Leeds and Zest’s Community Development Team. These sessions enable low-income families and vulnerable people to access basic cookery skills and cookery clubs that address social isolation.
