This class is an essential if you want to up your fish cooking game. It will not only teach you all the necessary techniques to prepare and cook a fish but it will also teach you what to look for when buying fresh fish, how to ensure its from a sustainable source and storage techniques.
During the class, you will learn:
  • Learn what quality points to look for in fresh fish and different types of fish – flat, round, oily and white.
  • Become confident in pan frying techniques.
  • Learn how fillet a fresh mackerel (round fish).
  • The chef will demonstrate how to prepare and fillet a whole seabass.
  • Develop your knife skills by cutting vegetables for a classic ratatouille to accompany your fish dishes.
Guided by a top chef from Leeds Cookery School, you'll learn to cook:
  • Pan fried sea bass with charred fennel.
  • Ratatouille.
  • Grilled mackerel.
You'll leave the class brimming with confidence, bringing home not only all the delicious food you've made, but also a handy recipe pack that'll help you recreate these essential techniques in the comfort of your own kitchen.

This class uses induction hobs. If you have a pacemaker fitted you will need to email the teacher so the class can be adapted.

Across our range of classes, courses and events at Leeds Cookery School our teachers promote and talk about seasonal ingredients, local sourcing and the importance of eating ethically and sustainably. Our ingredients are sourced from Yorkshire and are sustainable wherever possible and we always use free-range eggs. We order small quantities to minimise wastage and always consider the food miles travelled by our ingredients.
As well as donating profits to Zest, Leeds Cookery School has committed to running affordable cooking activities throughout the year, in partnership with Jamie’s Ministry of Food Leeds and Zest’s Community Development Team. These sessions enable low-income families and vulnerable people to access basic cookery skills and cookery clubs that address social isolation.
