Whether you're vegan, vegetarian or looking to add more plant-based diet recipes into your repertoire, discover top tips and tricks for whipping up Thai, Chinese and Indian meals plus some tasty baked goods.
A friendly, local chef from Leeds Cookery school will take you through every step of different recipes. This foodie adventure will take you from North India to China and Thailand over three cooking classes before finishing the course with a baking class with plenty of sweet treats.
Plant-based Indian cooking class:
In this part of the course, you will learn how to create your own curry using butternut squash, get acquainted with different spices and learn how to make a tarka to season your dhal. You'll also unlock secrets to cooking perfect pilaff rice and making curry paste from scratch to help you whip up a delightful Indian feast.
Menu:
  • Urad dal with skin - white lentil dhal.
  • Kaddu ki Subji - spicy butternut squash curry.
  • Oven-baked fragrant pilaf rice.
Plant-based Thai cooking class:
Using hands-on cooking and plenty of support from your teacher, you will pick up insights into Thai cooking. Develop your knife skills to prepare curries, learn to stir fry, and finish it off with perfect coconut rice.
Menu:
  • Sweet potato and aubergine Panang curry.
  • Tofu Pad Prik.
  • Thai Coconut rice.
Plant-based Chinese cooking class:
The skills you learn here are sure to make you put down the takeaway menu and cook up a storm at home whenever you want. In this part of the course, you will take a deep dive into the world of tofu, and stir-fried rice and learn how to make dumplings.
Menu:
  • Plant-based Kung Pao tofu.
  • Vegetable gyoza and dipping sauce.
  • Pineapple fried rice.
Plant-based baking class:
Uncover the fundamental knowledge of creating biscuits and cookies using plant-based ingredients. You'll learn how different vegetable fats can impact the shape, flavour and texture of your finished bakes. Plus, you'll get tips on how to use various seasonal fruits and vegetables in baking and how to effectively substitute eggs and butter in a baking recipe.

  • Plant-based chocolate chip cookies.
  • Spiced apple cider cake with speculoos icing.
  • Provençal tomato galette.
There is also a tasting session after each class where you have the chance to sample the tutor’s version of each dish.
Please note:
This class uses induction hobs. If you have a pacemaker fitted you will need to email the teacher so the class can be adapted.

Our ingredients are sourced from Yorkshire and are sustainable wherever possible and we always use free-range eggs. We order small quantities to minimise wastage and always consider the food miles travelled by our ingredients.
As well as donating profits to Zest, Leeds Cookery School has committed to running affordable cooking activities throughout the year, in partnership with Jamie’s Ministry of Food Leeds and Zest’s Community Development Team. These sessions enable low-income families and vulnerable people to access basic cookery skills and cookery clubs that address social isolation.
