You don't need a pasta machine to make parpadelle and although it looks super professional, your expert teacher Luca will show you how to achieve these gorgeous pasta shapes yourself using only a rolling pin and your triceps!
Although pappardelle is very common in central and northern Italy, it is in Tuscan cuisine that this pasta finds its greatest use, dressed with different sauces based on game meat. Some of the most famous pappardelle dishes are made with wild boar ragu and wild hare ragu. As it isn't easy to find these types of meat, you'll learn to make your parpadelle with another delicious and popular sauce made with peas, pancetta and mascarpone cheese.
Creamy and velvety, the sauce you make to accompany your handmade pasta will gladden any heart! Learn to make this tasty dish and treat yourself and your family and friends to some delicious homemade pasta.   • 200g of pasta flour, you can find this online or Sainsbury and Waitrose.
  • 150g of green peas.
  • 150g of pancetta.
  • 120g of mascarpone cheese.
  • Grated parmesan cheese.
  • 1 x onion.
  • 1 x garlic clove.
  • Half a glass of white wine.
  • Salt and black pepper to season.
  • Extra virgin olive oil.
