What to bring
Ingredients/shopping list to serve two people (four cannelloni each):
Please note, if you want to cook this recipe for more people, you will need to calculate 1 egg plus 100gr of flour for each additional person, plus increase all the other ingredients accordingly.
For the fresh pasta dough:
  • 200gr of 00 flour or plain flour too (it would do the magic)
  • 2 medium eggs
For the filling:
  • 300gr of ricotta cheese from cow's milk
  • 500gr of fresh spinach
  • 1 medium egg
  • 50gr of grated Parmesan cheese
  • A pinch of nutmeg powder
  • Black pepper and salt to taste
  • 1 garlic clove
  • 1 tomato can (400gr)
  • 1 small onion
  • olive oil
  • few basil leaves
  • 2 mozzarella balls
  • grated parmesan cheese
Optional white sauce (Besciamella sauce):
  • 1lt of milk
  • 100gr of flour
  • 100gr of butter
  • A pinch of nutmeg
  • Salt and black pepper to taste
Utensils required:
  • a PASTA MACHINE is ideal, alternatively, you can use a rolling pin (please bear in mind it will be more difficult)
  • Filler bag with nozzle (like the one to decorate cakes)
  • 1 big bowl
  • 1 grater
  • Cling film
  • 1 chopping board
  • 1 frying pan
  • 1 big pot to boil water
  • 1 small pot to cook the sauce
  • A whisk, if you want to cook the white sauce
