Learn to cook online with this fun virtual cooking class, and make a hot and stringy parmigiana to enjoy!

Cooking along with your experienced chef teacher, you'll learn how to make this delicious Italian dish, working with fresh ingredients.

Parmigiana is traditionally cooked with aubergine, but this recipe instead features courgette as the main ingredient - it makes the dish slightly sweeter and more delicate but still incredibly tasty.

Guided step-by-step through the making process by your expert teacher, you'll learn to prepare your ingredients, make a delicious white sauce and put your parmigiana together with style. It's excellent hot and stringy from the oven, but also super nice cold!

Ideal as a main course, starter or delicious appetiser, this cooking class gives you the skills you need to add this yummy Italian recipe to your repertoire for enriching family buffets, dinner parties or special mid-week dinners.

Once you've tried this dish and got the skills under your belt, you'll make it again and again. With few ingredients and a simple process, it's a great recipe to learn!

By the end of your online cooking class, you'll be able to take a seat and enjoy your awesome courgette parmigiana. You'll also have the know-how up your sleeve to repeat the process on future occasions.

What to bring
Ingredients (for four people):

You can divide the ingredients in half and use a smaller baking tray if you'd like to make a smaller portion.

  • 3 big courgettes (about 700g).
  • 150g of smoked ham (this can be omitted if you prefer a vegetarian dish).
  • 3 x smoked provola balls or Emmental cheese (normal mozzarella will also work fine but try to buy the dry one called scamorza otherwise the dish might get a little soggy! You can find it in any Italian deli).
  • 100g grated Parmigiano Reggiano.
  • 50g bread crumbs.
  • Salt and black pepper.
  • Extra virgin olive oil.
  • Basil leaves.

For the white sauce (also called besciamella):
  • 1 pint of milk (about 550ml).
  • 30g butter.
  • 30g plain flour.
  • 1 x garlic clove.
  • Half teaspoon nutmeg.
  • Salt and black pepper.
  • Fresh or dried sage.

Utensils:
  • Chopping board.
  • Baking tray about 24cm.
  • Pot for the white sauce.
  • Spatula.
  • Knife and fork.
