In this workshop, you will learn all about fermentation and its potential benefits. Join our Chef Manager, Joe Parke, and Rob Gould from The Cotswold Forager as they guide you on a journey into the world of lacto-fermentation.
During this hands-on course, you will discover how to create delicious and nutritious foods through fermentation. You'll also learn the best storage methods and the numerous health benefits that these nutrient-rich foods offer. Don't worry if you're new to fermentation, our experienced instructors will cover the basics, including salt percentages, times, temperatures, and storage techniques.
Get ready to explore the art of lacto-fermentation as you delve into making sauerkraut, kimchi, cultured cream, butter, yoghurt, kvass, tepache, seasonal fermented vegetables, and even fermented tomato chilli sauce. We'll even teach you how to make Moroccan and blackened limes and garlic, and introduce you to yuzu kosho and its culinary uses.
Throughout the class, you'll have the opportunity to taste a variety of fermented products made during the course. By the end of the day, you'll have gained the skills and knowledge to create delicious fermented foods in the comfort of your own home. Plus, you'll take home at least 4 products that you made.

As well as cookery classes we run regular events, pop up restaurants, a Hire-A-Chef service, and provide parties, corporate packages, chef demos and have a wonderful earth oven, fire pit and large courtyard area for outdoor cooking experiences.
