Join Norman's masterclass and embark on a delightful culinary journey through the vibrant flavours of Malaysian cuisine. In this 2.5-hour class, Norman will be your expert guide, teaching you the secrets and techniques behind creating delicious Malaysian dishes.

Every student will learn how to prepare and cook three dishes plus one demo by Norman.

Menu:

  • Loh Kei: Bean curd skin roll with chicken five-spice filling
  • Beef Rendang Tok: Slowly simmered beef dry curry with Malaysian herbs, spices, and roasted coconut
  • Mamak Penang Noodle: Wok-fried noodle with prawn, fritters, and vegetables
  • Yellow Coconut Rice (Demo)

The students will learn how to prepare rendang paste from scratch using herbs and spices.

TUTOR
NORMAN MUSA - Malaysian Cuisine & Asian Fusion Cuisine
Born in Penang, Malaysia, Norman moved to the United Kingdom in 1994 to study Construction Management (Quantity Surveying). After graduated with Honours, he worked as the surveyor for 9 years before switching his career to a full time chef. His first restaurant was opened in Manchester in 2006 and York in 2012, followed by two more in Malaysia in 2014 and 2016.

​In 2010, Norman joined Formula One Lotus team as the race chef which embarked his vision to promote Malaysian cuisine to the world.

​Hailed by CNN as one of Malaysia's most famous exports, he was featured in Masterchef Malaysia, BBC’s Tom Kerridge Best Ever Dishes and Channel 4’s Sunday Brunch and has been on numerous magazines in UK and Malaysia.

He teaches Malaysian and South-east Asian cuisines at the top cookery schools in the UK and Netherlands, as well as being the co-creator and tutor for Wagamama Chef Academy training and inspiring young Wagamama chefs into panAsian cuisine.

YUI MILES - Thai Cuisine
Yui comes from a strong Thai family where cooking and eating have always been a focal point of family life. My parents had always cooked traditional Thai and Chinese inspired dishes throughout my childhood, which I helped prepare and cook from a very young age.

She has followed her heart and passion for authentic Asian cuisine showcasing her dishes on BBC’s MasterChef UK 2019 as a quarterfinalist, the winner on ICG (Inspiring Culinary Generations) national cookery competition 2020. She also appeared on Channel 4’s cooking game show called ‘Beat the Chef’ where she beats the chef with Thai dishes and won.
She works with Authority tourism of Thailand on many occasions, also work with The Office of Commercial Affaires, Royal Thai Embassy, London crating Thai recipes and cooking videos on social medias to promote Thai cuisine and Thai food products in the UK. She has also worked with many brands and supermarket like Sainsbury, Amoy creating unique Asian recipes for their website and social media.
Yui is a cookery teacher and has been teaching cookery classes since 2019. Her class is relaxed with clear and easy to follow recipes plus many tips to recreate the dishes at home with ingredients readily available from the local stores. She is also a private chef, has been doing many Thai private dining at clients’ homes, work cooperate events, supper clubs and pop-up restaurants.
Her first cookbook called ‘Thai Made Easy’ was recently released in September 2023, with clear, uncomplicated instructions and accessible, supermarket-friendly swaps for traditional Thai ingredients is the aim for her cookbook ‘Thai Made Easy’ to demystifies the process of cooking flavourful Thai dashes at home.

TUTOR
ANA ABDULLAH - Malaysian Cuisine
Born and raised in Malaysia, Ana is a founder of Lazat Cooking in Kuala Lumpur. The school was launched in 2007 and it is a top cookery school in the city which has been visited by various chefs from around the world to learn the authentic Malaysian cuisine.

Illustrating her cooking style Ana stated ’Cooking itself is an art and although we are taught the basics, the rest is our own individual interpretation on it. There are no limits to what we can achieve when we let ourselves be fluid in our knowledge and understanding.’

Ana’s motto that she is “Look, Laugh and Learn” and she lives up to it by making her classes as fun and accessible to everyone.

Currently based in Manchester, Ana is a regular tutor for local cookery school and her lively personality makes her classes as always interactive, knowledgeable and entertaining.
