Born in Penang, Malaysia, Norman was hailed by CNN as one of Malaysia's most famous exports, he was featured in Masterchef Malaysia, BBC’s Tom Kerridge Best Ever Dishes and Channel 4’s Sunday Brunch and has been on numerous magazines in UK and Malaysia. He teaches Malaysian and South-east Asian cuisines at the top cookery schools in the UK and Netherlands, as well as being the co-creator and tutor for Wagamama Chef Academy.

YUI MILES - Thai Cuisine
Yui comes from a strong Thai family where cooking and eating have always been a focal point of family life. She has followed her heart and passion for authentic Asian cuisine showcasing her dishes on BBC’s MasterChef UK 2019 as a quarterfinalist, the winner on ICG (Inspiring Culinary Generations) national cookery competition 2020. She also appeared on Channel 4’s cooking game show called ‘Beat the Chef’ where she beats the chef with Thai dishes and won. Her first cookbook called ‘Thai Made Easy’ was recently released in September 2023.

Founder member of Asian Cooking Academy with Norman Musa and Yui Miles. Owner of MySpiceTin making authentic high quality Garam masala & Chai masala spice blends by hand himself, using his family recipes passed down from his Grandmother who was the biggest influence in his culinary journey, bringing him up in his early years and making food a central part of his life. Food/Recipe Content creator specialising in Authentic and Indian fusion dishes, he loves to take the classics and spice them up with his own twist. Has a real passion to teach people how to cook authentic Indian food with fresh ingredients and amazing spices in a fun and entertaining way.

An Indonesian author, chef and consultant based in the UK, Petty has pioneered a modern approach to Indonesian
culinary traditions via cookbooks, cookery lessons, newspaper columns and magazine articles for over 20 years in Indonesia and the UK. She has made guest appearances in many leading hotels, resorts and restaurants in the UK, Europe and around the world.

Her latest book, THE INDONESIAN TABLE published by PHAIDON
won the 2023 Gourmand World Book Award as the best Asian cuisine cookbook.
Her credits as a contributor or in interviews include Conde Nast travel, the

UYEN LUU - Vietnamese Cuisine
Uyen Luu is the cookbook author of Vietnamese, Vietnamese Vegetarian and Quick & Easy Vietnamese published by Hardie Grant. She works as a food photographer for various commercial brands and editorials, she trained at Central St Martins College Of Art.

At the weekends, she runs her Vietnamese supper club and Vietnamese cooking classes, cooked by her and her family. They have been going since 2009. She lives in North London with her family and writes substacks and books.

What a lovely day the course was well organised.
The pre course information was excellent.
The location was perfect and we were really made welcome by Norman and his team.
Norman is a friendly talented chief who made the day very relaxing and enjoyable.
I can’t wait for more course dates to become available so I can book them.

We cooked 4 delicious dishes. Two of them we ate during a break in the lesson and the other two we took home to share with our family. All were delicious and have inspired me to cook them again.
It was a fun, informative class with a bunch of lovely people.

Great teacher with beautiful fresh fish learnt how to steam seabass & make a very tasty dressing.
The only problem was the room was very cold however this was being sorted just not for us.

The teacher was great as were his assistants. Learner a lot but one minus (not reflecting the teacher) was the venue as it was very cold and the air conditioning was blowing very cold air and we were not able to change the setting to blow warm air. Otherwise the course was fantastic and will highly recommend to friends

Norman is a wonderful teacher, with lots of tips to cook seafood well. The food was delicious, my favourite were the scallops.
The only problem was the air conditioning seemed to be stuck on freezing cold. There were no staff around to help. It did spoil the day.
