This hearty soup is a beautiful addition to your repertoire of one-pot dishes. We combine a delicious medley of seasonal vegetables, borlotti beans and pasta into a rich soup, with a savoury base of tomato and fresh herbs. This dish is incredibly versatile and will carry you from early spring into the summer and beyond. You will learn the elements of building the soup from the base and what gives minestrone its unique place among the soups.
