If you've been looking for ways to inspire your palate and expand your culinary horizons, come along to this cooking class where you'll be learning from an experienced chef all about the cuisine of Réunion Island.

The food of Réunion is simple and unfussy, but its flavours make it sing. Experience the fragrant tang of the kaffir lime, the bright warmth of a creole cari and the heat and zing of rougail.

Reunion Island curries take their influence from Pondicherry in India, the region was a French colonial settlement until 1954, many from that region travelled to Reunion Island in the late 17th century in search of a better life. Their settlement on the island has influenced Reunion cuisine ever since.

In this session, you will cook up an exotic starter using mango, lime, and avocado just to name a few of the ingredients, as well a traditional “cari”, which is a spicy and traditional dish using meat or fish, both are cooked in a rich turmeric sauce. In this session you will make 2 “cari” using chicken and fish, a rougail (a traditional side dish with chillies), a bean stew and rice, and a very exotic dessert (using papaya, mango, pineapple and rum).

Then, it’ll be time to ake a seat at your friendly host's table and enjoy the fruits of your labours.

My passion for cooking comes from my childhood. I was born on the island of Réunion, a small French colony off the coast of Madagascar. Although my parents moved to France when I was very small, the spirit of the island was very much alive in our home, and especially in our kitchen.

I love introducing a touch of sunshine into my cooking and often add tropical flavours from Réunion to my desserts to give a vibrant twist to the elegant French classics. All the recipes used at Gourmandises Académie are my own, and each one has been developed with time and a lot of love. I’m so happy to have been recognised with three stars in the prestigious Great Taste Awards.

I am excited to share some of these recipes with you and look forward to welcoming you into my home as a student of the Gourmandises Académie.
