What you'll do
Getting Christmas-ready with this packed full pastry class.
In this class, I will teach you how to impress family and friends with delicious mouth watering canapes and petits fours.
In this workshop, you will learn a range of pastry, how to make the perfect sweet and savoury shortcrust and also choux pastry. The focus for this class is the festive season, so we will be making a range of fillings, sweet and savoury mousses, frangipanes, gougères, festive croustades, salted caramel, ganache, caramelised apples and flambée bananas just to name a few, allowing you to create a variety of sweet and savoury delights. Perfect class, if you enjoy entertaining at Christmas.
At the end of the session, you will be able to take away your moreish creations.
This class includes a delicious home made lunch with a complimentary glass of wine.

Your teacher
My passion for cooking comes from my childhood. I was born on the island of Réunion, a small French colony off the coast of Madagascar. Although my parents moved to France when I was very small, the spirit of the island was very much alive in our home, and especially in our kitchen.
I love introducing a touch of sunshine into my cooking and often add tropical flavours from Réunion to my desserts to give a vibrant twist to the elegant French classics. All the recipes used at Gourmandises Académie are my own, and each one has been developed with time and a lot of love. I’m so happy to have been recognised with three stars in the prestigious Great Taste Awards.
I am excited to share some of these recipes with you and look forward to welcoming you into my home as a student of the Gourmandises Académie.
