Today we practiced making a classic French bûche de noël - my favourite part was seeing how the ingredients changed during the mixture process, learning to make an amazing ganache montée and learning new techniques to practice to help make an even better genoise sponge. I will definitely be coming again for more feedback and advise, she’s great!"
