Fresh egg pasta is usually tied to northern and central Italy, while southern traditions often use the classic – durum wheat semolina and water. Pasta shapes have their own regional identities too, and aren't chosen at random: their size and textures can all affect how they hold a sauce!

  • Eggs or water: The liquid you use depends on the type of pasta you're making and the regional tradition you're following.
  • A work surface: A large, clean surface gives you room to knead and roll your dough.
  • A rolling pin: Perfectly possible for making pasta by hand and particularly useful if you want to embrace the traditional approach!
  • A pasta cutter or knife: Handy for turning your sheet of dough into ribbons or other shapes.
  • A pasta machine: Not essential, but incredibly useful for rolling dough evenly and thinly. It can also make cutting certain shapes much quicker.

Some traditional pasta-making tools are so much simpler than you’d think – a rolling pin, board, cutter and your hands can be enough to get going, while more specialist tools can be added as your pasta obsession develops (which it will, trust us).

Making and kneading the dough

You'll start with the foundations: combining your ingredients and working the dough until it reaches the right consistency. It needs a bit of welly, but you’ll love watching the mixture come together!
