I started baking about 9 years ago. At first as a hobby. Then I got really into it, practiced more, and took a student job as a pastry baker.
I went working at hotel Shangri-La in Paris with chef the pastry chef Michael Bartocetti.

When I got back to France, I decided to formalize my Pastry Baking - by taking the national exam CAP Pâtisserie as an external candidate, and today I live in London and want to teach some of the best pastry techniques I learned over the years!

Marie was really great and thought us the fundamentals in making a great choux pastry that will help us experiment on our own next time. We had one of the best tasting savory and sweet choux pastry result. It was a great bonding experience for me and my fiance, and 3hours of cooking felt too fast.

Marie was incredibly friendly and welcoming from as soon as we walked in. Having only 2 people there made it feel quite relaxed and felt I could ask questions as we went along. It was also nice being able to have a friendly conversation throughout lesson as it made it feel more like going to a friends house than a formal lesson. I would 100% recommend it to my friends and might even go back again!

I highly recommend Marie's cooking class! I had a great time, it was fun and educational. Marie is very attentive, gentle but rigorous, and the choux we made together were magnificent and delicious! I recently attended a choux pastry workshop and it was a delightful experience. The teacher was incredibly skilled and had a warm, engaging teaching style that made complex techniques seem approachable. The venue was well-equipped, spacious, and had a welcoming ambiance, which made the learning process very comfortable.

All necessary materials, from high-quality ingredients to professional kitchen tools, were provided. This not only made the workshop hassle-free but also allowed us to work with top-notch resources. Throughout the session, we learned various techniques for making perfect choux pastries, including mixing, piping, and baking. Marie was fantastic! Such a accommodating, polite and professional teacher and person

Marie made it so ease to learn what is a very technical process! From learning how to make the chou pastry to the the crème patisserie in both vanilla and chocolate flavours to the inspired and morish savoury shou buns…. Brilliant.

Marie took time to teach us not only the recipient, but feel our way through the process so we could identify key moments to reduce heat, add eggs or sugar and when to add different elements during the process.

Honestly, had such a fabulous time with my partner and we come back a little more skilled in the baking department!
