  • Organic sourdough bread, wild garlic butter
  • Knepp Longhorn beef kidney & beetroot arancini, wild herb aioli
  • Charred Knepp farm leeks, Organic High Weald Dairy Sheep's cheese, truffle oil, toasted almonds
  • Knepp fallow fillet, celeriac puree, mizuna, elderberry & red wine jus
  • Raspberry & sorrel sorbet, crushed meringue
  • Caramelised apple & vanilla custard mille feuille, ginger crumb, brandy butter

Soil is the centrepiece of Earth’s health. This treasure beneath our feet hosts a quarter of the planet’s biodiversity and provides about 95% of the worlds’ food. Today, we are losing topsoil faster than it can be replenished. According to the United Nations, we may just have 60 harvests remaining. But with regenerative agriculture, we have a chance to press “re-do” on soil health.

We advocate organic and artisan produce, with a focus on regenerative. Our planet needs us to understand how to cook and eat in not just a sustainable, but regenerative way. When you support our business, you are supporting the expanding global movement of regenerative agriculture. Cooking with local, seasonal, wild and slow-grown ingredients that sequester more carbon in the soil than they produce is the future. They also taste better, and we believe this is the ultimate feel-good food!

We don’t pretend to be laden with all the latest kit, high-tech gizmos and cookery gadgets. Instead, we celebrate honest, high-quality food, cooked simply and showcased by experts with infectious enthusiasm for all things edible. We want to inspire our students to express themselves through cookery and in nature, and believe all the best people love to eat!
