Whether you’re new to plant-based cooking or looking to broaden your vegan repertoire, you’ll gain confidence in the kitchen at Natural Cookery School's flagship five-day course in Nailsworth. Guided by Chef Erin, this immersive experience promises a wonderful week of hands-on cooking and eye-opening demonstrations, where you will learn to create delicious seasonal and organic meals.

Erin will share culinary and nutritional expertise gained over decades of working with food, showing you how to create fine foundations with plant-based sauces and stocks; how to use proteins such as tofu and tempeh as the building blocks for delicious dishes; and demonstrating modern and traditional recipes from around the world. You will also learn foundational baking skills to create a variety of bread, cakes and desserts.

Course outline:

  • Hone your skills to create modern plant-based dishes, nutritionally balanced for optimum health
  • Assemble salads all year round, from warming winter ensembles to the freshest, crispest summer plates
  • Create hearty soups that satisfy, made with homemade stock and seasonal vegetables
  • Sessions with our in-house nutritionist
  • Discover the joy of sprouting – how to do it… and what to do when you’ve done it!
  • Learn about fermentation and why it's key to a healthy gut biome
  • Bake and prepare tempting desserts created with fruit and a variety of sweeteners
  • Explore global flavours – bring the tastes of the world to your kitchen and get the most from your spice rack
  • Master the essentials – professional standard knife skills; working with vegan ingredients such as agar agar, jackfruit and aquafaba; cooking key ingredients such as pulses and grains to perfection
  • What to keep in your pantry so you’re always ready to whip up a tasty and nutritious meal

Please note:
  • Class times will be Monday to Friday 9:30am to 4:30pm, finishing at 3:30 on the Friday.
  • Recipes will be vegan. Please let us know about any allergies or dietary restrictions when you book.
