The Fermentarium is an independent organisation dedicated to promoting the small-scale production of “real” fermented food and drink. The adventure began in 2014, beginning with sourdough bread and pizza making.

Owners, Simon and David, wanted to share their knowledge and experience with others and started running lactic fermentation classes. Eventually, they were joined by Anna in 2016 and added further classes to their repertoire including kombucha, soft fermented drinks, cultured condiments and dairy ferments.

They run interactive and exciting classes that share the love for fermented foods with others. Whether you're a newbie or well experienced, anyone can join. Corporate events and private courses can also be catered for.

James was a great instructor. Very calm, passionate and informative. We shaped a rye loaf and then made whole wheat sourdough dough to take home with us, along with the warm rye loaf, to bake. He also gives you a scraper and a starter to take home. There's an informative print out you can keep - although ours wasn't updated with the amounts we used that day, but he said he would send that through. He bought fresh sourdough for the room to snack on with some olive oil and kimchi. Yum! Highly recommend.

Excellent kombucha course with a very knowledgeable teacher in a friendly atmosphere. We were all given a large jar with a primary fermentation (inc scoby) and a small jar with secondary fermentation using our choice of flavours. Online follow-up support is offered.

It was an amazing class (got it as a gift) that I am so happy I got to experience. As a fun of eating fermented stuff but with not too much hand-on experience, this was an excellent introductory course.
