One of the Samplers of dumpling filling:
Minced Pork & Cabbage Dumpling Filling (4 servings)
Ingredients:
  • 400g minced pork (20% fat is ideal for juicy filling)
  • 250g cabbage (Chinese leaf/Napa cabbage or white cabbage) – finely chopped
  • 1 tsp salt (for cabbage)
  • 2 spring onions, finely chopped
  • 1 tbsp soy sauce
  • 1 tbsp oyster sauce (optional for richer flavour)
  • 1 tbsp sesame oil
  • 1 tsp sugar
  • ½ tsp white pepper
  • 1 tbsp grated fresh ginger
  • 1 small garlic clove, minced (optional)
  • 1 tbsp cornflour or plain flour (helps bind the mix)
  • A splash of Shaoxing wine (optional)
