To start the class, you will be given a brief introduction on kimchi from its history to interesting facts and how it relates to modern kimchi that we love.

While the cabbage is salting we make the kimchi paste. You will be given clear instruction what to put in the paste and how to adjust the amount of the key ingredients according to your preference.

You will have fun with kimchi tasting. I keep 6 months' samples of my homemade kimchi. Tasting kimchi at every month of maturity really lets you see and taste how the kimchi magic is developed over time.

As well as learning to make your own kimchi, we offer a unique guided kimchi tasting session, where you will sample homemade kimchi across five to seven different stages of fermentation – from a freshly tossed batch to a richly aged six-month version. It's a friendly, flavour-packed way to experience how Korea's most iconic dish develops over time.
Don't worry if you've never fermented anything before; the class is carefully designed to suit anyone who is interested in making kimchi. Your teacher will guide you step-by-step through an incredibly simple recipe designed for consistent, delicious results. You'll get hands-on experience crafting two of the most popular styles from scratch:
  • Cut-cabbage kimchi (Mak-Kimchi) – Learn the simple method of prepping, salting, and seasoning cabbage.
  • Cucumber kimchi salad – Whip up a fresh, crunchy side dish packed with instant flavour.
After mastering your mixes, you'll learn how to use matured kimchi to cook crisp, savoury kimchi pancakes. They're wonderfully easy to make and completely addictive!

Yes absolutely. As long as you inform me in advance, I can prepare the right ingredients for you to make vegan kimchi.
I am allergic to certain ingredient that goes in the kimchi. Can you accommodate it?
If you inform me in advance I can prepare an alternative ingredient. Sometime, certain ingredient can be omitted without affecting the taste
