Yes absolutely. As long as you inform me in advance, I can prepare the right ingredients for you to make vegan kimchi.
Q: I am allergic to certain ingredient that goes in the kimchi. Can you accommodate it?
If you inform me in advance I can prepare an alternative ingredient. Sometime, certain ingredient can be omitted without affecting the taste
Q: Can you show me the kind of containers to use to keep my kimchi?
I can show you a range of options for storing your kimchi and the key factors that determine a good fermentation.

Introduction to Kimchi
To start the class, you will be given a brief introduction on kimchi from its history to interesting facts and how it relates to modern kimchi that we love.
Ingredients
You will be shown all the essential ingredients, where you can get them and how to use them. I will also teach you which ingredients can be replaced or omitted in certain situations.
Cutting the Cabbage
You will learn different methods of cutting your cabbage and I will explain how each method differs.
Salting of the Cabbage
Salting is one of the most important stages of kimchi making. I will explain step by step how to do it and how to avoid mistakes.
Making the Kimchi Paste
While the cabbage is salting we make the kimchi paste. You will be given clear instruction what to put in the paste and how to adjust the amount of the key ingredients according to your preference.
Cucumber Kimchi Salad
As a second kimchi, you will learn to make quick cucumber kimchi salad which can be eaten straight away and makes a great side dish to many meaty dishes.
Mixing the Cabbage in Kimchi Paste
When the cabbage is salted enough, we wash it and mix in the kimchi paste.
How to Look After Your Kimchi
I will show you how to keep you kimchi and things to be careful with when storing kimchi for best taste. I also explain the maturing process of kimchi and what to expect at each stage.
Kimchi Tasting
You will have fun with kimchi tasting. I keep 6 months' samples of my homemade kimchi. Tasting kimchi at every month of maturity really lets you see and taste how the kimchi magic is developed over time.
Korean Home Meal
We finish off the class with a sit down at the table of authentic homemade Korean dishes that pair perfectly with kimchi, including Korean BBQ grilled chicken. A real insight of how Korean people enjoy our food and what food means in our daily lives.
