Guided by a chef with over 13 years of experience in Michelin-starred kitchens, you'll gain the confidence to make fresh pasta and sauces in a friendly and supportive setting. This is the perfect activity for anyone wanting to master a new culinary skill.
This course is structured as a four-week programme, with one session per week, but there is also an optional one-day intensive version available if you'd prefer to learn everything in one go. Your instructor will guide you through every step, ensuring you feel comfortable with all the techniques and tools used in this hands-on workshop.
Over the four weeks, you will learn:
  • Week one: Pasta fundamentals – You'll receive an introduction to essential ingredients and tools and learn how to make fresh egg-based and semolina pasta dough. We will cover kneading, resting, and rolling techniques (by hand and with a machine) before you get hands-on making tagliatelle and pappardelle.
  • Week two: Shaping techniques – Discover how to cut and shape a variety of short pastas, such as farfalle, orecchiette, and cavatelli. You'll also explore the art of stuffed pastas like ravioli and tortellini, learning about delicious filling ideas before making your own ravioli with a seasonal filling.
  • Week three: The sauces – This session is dedicated to creating the perfect sauce. You'll cover sauce basics like emulsification and reductions and learn to make classic sauces, including pomodoro, alfredo, pesto, and ragu. To put your knowledge into practice, you'll make gnocchi with sage butter and fresh spaghetti with a tomato-basil sauce.
  • Week four: Pasta party and final challenge – In your final session, you'll put your new skills into action by cooking a full pasta dish from start to finish. You'll participate in a collaborative pasta bar or a friendly cook-off, followed by taste testing and feedback.
You will leave this course with a certificate of completion and a recipe booklet to continue your practice at home. This experience will fundamentally change the way you cook, equipping you with the lifelong ability to create impressive and delicious pasta dishes for friends and family.
