In this live masterclass, award-winning chocolatier David Greenwood-Haigh will guide you through creating smooth handmade chocolate truffles inspired by the flavours of gin and tonic.
You’ll learn how to make a silky ganache, control texture, balance alcohol and understand how citrus, juniper and other botanicals interact with cacao.
This is more than simply following a truffle recipe. David will show you how flavour pairing works so you can understand why ingredients complement one another and begin creating combinations of your own.
You’ll hand-roll and finish your truffles during the session, leaving with a delicious collection of chocolates and new skills to recreate them at home.
