In this Mexican cooking class in London, you'll be transported to Baja California, a foodie haven famous for its fish and seafood dishes. Karla, hailing from Ensenada, will share her family recipe for Baja fish tacos. You'll also create a fresh ceviche, corn tortillas, tostadas, and a spicy salsa. Karla will even demonstrate how to eat a ceviche tostada Ensenada style. I’m Karla Zazueta – a self-taught chef, Mexican cookery teacher and food writer, and the person behind Mexican Food Memories, my little cookery school based in North London.
For the past five years I’ve been teaching the food I grew up with – real Mexican home cooking – through my hands-on cooking classes at Mexican Food Memories. I love sharing not just the recipes, but also the stories, traditions and techniques behind them, from making proper corn tortillas and working with nixtamalised corn, to the slow, comforting dishes I learned from my family.
Alongside my classes, I also host intimate Mexican Food Memories supper clubs at my family home in North London, at the end of every month. They’re small, relaxed evenings where I cook a full menu for a tiny group and welcome people into my home to experience what Mexican food really feels like around the table.
My recipes and work have been featured in places like The Guardian, BBC Food and NatGeo Food Magazine, which I’m still incredibly proud of.
I’ve also just released my first cookbook, Norteña, where I share the story of my family recipes and the food of northern Mexico – the region that shaped the way I cook and the flavours I love most.
