Master one of the most important skills in chocolate making while developing your palate in this interactive tempering and tasting masterclass.
Guided by award-winning chocolatier David Greenwood-Haigh, you’ll learn why chocolate needs to be tempered and how temperature, crystal structure and technique create the shine, snap and texture associated with professionally finished chocolate.
You’ll then put the technique into practice by creating your own tempered chocolate creations.
While your chocolate sets, David will lead you through a curated single-origin chocolate tasting, showing how origin and production can influence aroma, texture and flavour.
This is a hands-on session combining chocolate science, professional technique and sensory discovery.
You’ll finish with chocolate you have made yourself, practical tempering skills and a much deeper understanding of how great chocolate should look, feel and taste.

While your chocolate puddles set, immerse yourself in a tasting experience, sampling six different single-origin chocolates. Explore rich flavour profiles, unique textures, and the origins of these chocolates, guided by your expert teacher.

No experience needed! This beginner-friendly workshop is designed to guide you through every step, making it easy and enjoyable to create professional-quality chocolate bars.
What you'll need
  • Apron or old clothes (chocolate-making can get messy!)
  • Your choice of dry toppings for decoration (nuts, freeze-dried fruit, coconut, toffee pieces, etc.)
  • Metal or glass bowl
  • Small pan for creating a bain-marie
  • Spatula and spoon
  • Small tray or dish
  • Access to a microwave stovetop/hob and freezer
  • A wipe-clean surface to work on

David Greenwood-Haigh is an award-winning chef, chocolatier, international chocolate consultant, educator, and creator of Chocolate Safari®.
His work has taken him from professional kitchens and judging tables to cacao farms, chocolate factories, universities, and hospitality schools around the world.
