Learn the essentials of home kombucha fermentation in this hands-on workshop in London and leave with the knowledge and confidence to start brewing your own.
You'll discover the fundamentals of kombucha fermentation – how it works, what makes it different from other styles of fermenting, and the crucial role the SCOBY plays in creating a healthy, thriving brew. We'll cover the key principles you need to maintain a successful ferment, so you understand not just what to do, but why you're doing it.
During the session, you'll make your own kombucha first ferment to take home and continue nurturing. You'll also explore the second fermentation process, learn how to flavour your kombucha with whatever appeals to you, and discover how to adjust the acidity and carbonation to create a brew that's perfectly suited to your taste. This is where it gets fun – once you know the basics, you can experiment and make kombucha that's entirely yours.
By the end, you'll have practical, hands-on knowledge you can use straight away, a living ferment to look after, and the spark of confidence to keep experimenting at home. Kombucha making isn't mysterious or complicated – you'll see that for yourself.

The Fermentarium is an independent organisation dedicated to promoting the small-scale production of “real” fermented food and drink. The adventure began in 2014, beginning with sourdough bread and pizza making.
Owners, Simon and David, wanted to share their knowledge and experience with others and started running lactic fermentation classes. Eventually, they were joined by Anna in 2016 and added further classes to their repertoire including kombucha, soft fermented drinks, cultured condiments and dairy ferments.
They run interactive and exciting classes that share the love for fermented foods with others. Whether you're a newbie or well experienced, anyone can join. Corporate events and private courses can also be catered for.
