Discover the sweeter side of West African food with Chef Dumebi in Sweet Earth, an intimate, hands-on dessert experience exploring flavour, memory and culture.
Set in a welcoming North London kitchen, this class celebrates ingredients that are familiar across West African kitchens and tables, including hibiscus, plantain, coconut, yam and Milo. Together, we explore creative ways to transform them into delicious contemporary desserts.
Chef Dumebi will guide you step by step through the recipes, sharing practical techniques alongside the stories, memories and cultural influences behind the ingredients. You will learn how to balance sweetness, acidity, spice and texture, while discovering ideas you can take back into your own kitchen.
No previous cooking or baking experience is needed. Sweet Earth is designed for curious home cooks, dessert lovers and anyone who wants to discover another side of West African food.
What to expect
You will cook alongside Chef Dumebi in a relaxed, small-group setting, with plenty of opportunity to taste, ask questions and understand the ingredients you are working with.
Depending on the session, the Sweet Earth menu may include:
Hibiscus Apple Crumble Cake
Hibiscus-simmered apples baked beneath an oat crumble, bringing a floral West African note to a British comfort classic.
Plantain and Coconut Pudding
Creamy, baked and gently spiced, celebrating two ingredients loved across West African cooking.
Sweet Yam Balls with Zobo-Ginger Glaze
Golden bites finished with a fragrant hibiscus and ginger glaze.
Puff Puff Trio
Biscoff, Oreo and double-chocolate Milo interpretations of one of West Africa's most loved sweet treats.
You will also be welcomed with a creamy hibiscus cooler inspired by zobo as we settle in and begin the Sweet Earth experience.
