Learn the basics of sourdough fermentation and bread baking in this intro to sourdough class with a local, talented teacher from The Fermentarium.
To kick off this bread-making class, you'll learn the fundamentals of fermentation, and specifically, sourdough, interweaving these core principles with baking techniques throughout the class.
We’ll cover topics comparing sourdough to other types of fermentation, the health benefits of sourdough, the role of different ingredients in baking, and concepts like gluten development and hydration levels. Special attention will also be given to decoding different flour varieties and grains.
You'll try shaping a rye loaf which will be baked later in the class. Then we’ll make a wholewheat loaf from scratch, which we’ll shape at the end of the course so you can take and bake it at home as per our instructions. Finally, we’ll make a rye starter which you’ll also take home to be cared for and watch come to life. In addition to a fresh rye loaf, wholewheat dough, and rye starter, so please bring a tote bag to carry home your goodies!
This class is designed to provide you with the fermentation and baking skills to build your sourdough and baking intuition, so you can adapt recipes to your particular environments and flour preferences.
The class includes a selection of fermented snacks midway through.

  • 5/5 from Simon Tudor, attended May 2026: Absolutely fab day. James was so friendly, answered all of our questions clearly and simply. I can’t wait to see how my bread tastes when I get it home!
  • 5/5 from Robert Lloyd-Evans, attended May 2026: James was very knowledgeable and delivered communication in a calm easy to follow fashion. It was great to experience some of the steps of sourdough making. Be aware that making sourdough takes a few days, so you won't be able to do everything in the class, but you'll definitely get a good feel for what you need to do.
  • 4/5 from Charlene Stillwell, attended Apr 2026: James, the tutor was friendly, knowledgeable. The 3 hour class passed by very quickly and James answered everyone’s questions. Would recommend.
  • 5/5 from Rohan Desai, attended Jan 2026: Very good teacher. Relaxing. Lot of fun. Good chat. Good times. Good bread.
  • 5/5 from Claire Power, attended Jan 2026: James was very friendly and knowledgeable.
  • 5/5 from Maggie Bavington, attended Jan 2026: Made some rye sourdough bread to take home, also sourdough starter, and made dough for another loaf to bake at home. Teacher was very informative, far too much to remember everything, but we got loads of detailed notes to answer all our questions
  • 5/5 from Monika Ziemecka, attended Sep 2025: Fantastic class, not only very knowledgable but fun at the same time enjoy the proces and left with sourdough starter, sourdough dough to bake at home, and beautiful freshly baked rye bread. Now I feel very confident to bake this myself at home. Recommend highly ️
  • 3/5 from Demezhan Marikov, attended Sep 2025: The teacher definitely knows how to bake really good sourdough bread and is clearly passionate about it. However, the explanations—and even the documents shared afterward—weren’t very clear for a complete beginner like me. For simple questions, the teacher responds with complex answers, while we were hoping to have fun and learn to bake sourdough bread from a practical perspective. I think the teacher should try to meet us at our level, explaining things in simpler terms and with the expectation that this is one of our first experiences, and probably most won't do it again.
  • 5/5 from Symeon, attended Jul 2025: Incredible class with an even more lovely teacher! Maisie was amazing, extremely passionate, sharing knowledge and guiding us through the process. We started off by baking a rye loaf and then moved on to a second countryloaf which we took home and baked it. Got our starter as well! For all the aspiring bread bakers I highly recommend you this course as you'll definately learn something new and have some great time!! Thank you Maisie for such a great course!
  • 5/5 from Sabine McGuin, attended Jun 2025: Nice location. James was a very knowledgeable teacher. We took the starter for the sourdough home, as well as a freshly made loaf and the dough to cook at home. 2nd picture was my attempt at home. Not as pretty as the one in the class, but it tasted lovely.
  • 5/5 from Hilary Risley, attended Jan 2024: James was a great instructor. Very calm, passionate and informative. We shaped a rye loaf and then made whole wheat sourdough dough to take home with us, along with the warm rye loaf, to bake. He also gives you a scraper and a starter to take home. There's an informative print out you can keep - although ours wasn't updated with the amounts we used that day, but he said he would send that through. He bought fresh sourdough for the room to snack on with some olive oil and kimchi. Yum! Highly recommend.
  • 5/5 from Harriet Anderton, attended Jun 2023: Best experience ever my son and I really enjoyed ourselves. We are now hooked on baking bread.
  • 5/5 from Alessandra, attended Apr 2023: Fantastic class! Jeanne is very knowledgeable, she'll provide you with all the necessary information to bake delicious sourdough bread and how to maintain the starter. You'll walk away with a freshly baked loaf of bread, dough to bake another one at home and with a huge smile on your face and the eagerness to bake more, more and more!
  • 5/5 from Rebecca Jones, attended May 2019: My partner and I had a brilliant time at the workshop! Hat was a great teacher and gave a good intro to the different stages for sourdough baking. Really great for beginners and for those with some baking experience. Nicely paced, with tips along the way. It was great to take a freshly baked loaf home, plus two doughs at different stages and beginning a starter culture in the workshop for future sourdough baking adventures! Would recommend :)

The Fermentarium is an independent organisation dedicated to promoting the small-scale production of “real” fermented food and drink. The adventure began in 2014, beginning with sourdough bread and pizza making.
Owners, Simon and David, wanted to share their knowledge and experience with others and started running lactic fermentation classes. Eventually, they were joined by Anna in 2016 and added further classes to their repertoire including kombucha, soft fermented drinks, cultured condiments and dairy ferments.
They run interactive and exciting classes that share the love for fermented foods with others. Whether you're a newbie or well experienced, anyone can join. Corporate events and private courses can also be catered for.
