La Canistedda was born from a casual conversation about culurgiones and how strange it is that this kind of pasta is virtually unknown to most. Unsurprisingly, it was impossible to find them in London so we decided to make our own. A year later La Canistedda was born, a small pasta place full of soul. Our courses aim to teach lesser known pasta shapes and techniques using traditional tools.Classes are taught by Alessandro (professional Chef) and Sarah (pastaia).
