Originating from the Ogliastra region, these pasta pockets, similar to dumplings, are traditionally filled with a creamy potato, Pecorino cheese, and mint mixture, and are known for their distinctive wheat-shaped closure, the 'spighitta'.
This activity is perfect for beginners; we'll guide you through each stage of the process, from mixing and rolling the dough to filling and expertly folding the pasta. You'll discover the secrets behind this traditional dish, learning how to create the iconic 'spighitta' and crafting an icon of Sardinia's rich culinary heritage.
You'll learn:
