Join this hands-on workshop and learn the secrets to creating the perfect chewy bagel from scratch. You'll be guided through the sourdough process to achieve a fantastic texture and digestibility, resulting in a beautiful, mild, and creamy flavour rather than a sour one.
It's a wonderful way to switch off and get stuck into a new skill as you're guided through every step of the process. You'll learn how to work with a sourdough starter specifically for sweet and mild baking, as well as how to maintain it for your future kitchen adventures.
During this session, you will:
  • Levain and maintenance – Learn about the sourdough starter used for sweet and mild baking and how to maintain it.
  • Hand-kneading – Knead the dough by hand to build essential bagel strength; it's a low-hydration dough, so you'll get a bit of a workout.
  • Shaping – Master the technique of shaping and "punching the hole" – easily the most satisfying part of the day.
  • Toppings and baking – Experiment with different toppings before boiling and baking your creations to perfection.
You'll finish the class by tasting your fresh bagels together with your group, leaving with the confidence to recreate these artisan treats in your own kitchen. You'll walk away with a newfound sense of culinary accomplishment and a delicious batch of handmade bagels to share.
