You will learn how to choose the right potatoes, the perfect flour-to-potato ratio, and the traditional 'rigagnocchi' technique to create those iconic ridges that catch the sauce. This class is designed for beginners and food lovers who want to master a timeless Italian classic in a fun, supportive environment.
What to bring
For the gnocchi:
  • 500g floury potatoes (e.g., Maris Piper or King Edward).
  • 150g flour (00).
  • 1 egg (optional, for stability).
  • A pinch of salt.
For the sauce:
  • 500ml tomato passata.
  • 1 garlic clove.
  • 1 mozzarella
  • Extra virgin olive oil.
  • Fresh basil.
To bake (Sorrentina style):
  • 250g fresh buffalo mozzarella (drained).
  • 50g aged Parmigiano Reggiano.
