Making the Dough
We mix and develop our dough by hand, learning what to look and feel for at each stage. I will also tell you about my favourite flour!
Meet the Lievito Madre
I will introduce you to my Italian starter and show you how to use it if you want to take your pizza and focaccia in a sourdough direction. Let me know when you book the class if this is what you would like to do!
Dough Balls
Before the dough can rest and rise, we shape it into perfectly round, smooth and tight balls. This step is key to getting a great rise and an airy, open texture in your final pizza
Stretching the Pizza Dough
No rolling pins allowed! I will show you how to open and stretch your dough by hand, the traditional way, to get a thin, even base with a lovely puffy crust
Topping the Pizza
We add the tomato sauce and choose our toppings. I will share some classic combinations and a few tips on what makes a great pizza topping, less is usually more.
Baking
Your pizza is topped and ready to go into the oven. Baking great pizza at home is all about heat and timing. I will share my tips on how to get the best out of a regular oven, from temperature and positioning to knowing exactly when your pizza is done.
Tasting
To finish we will taste the pizza we just baked!
