She broke down the technical aspects of French baking into simple steps, which made the whole process feel completely manageable even for a beginner.During the class, we were hands-on the entire time. We learned the precise technique for making and piping choux pastry, watching it bake into perfect, airy puffs. We also crafted a rich, smooth custard and assembled beautiful fruit tarts topped with fresh blueberries, raspberries, and strawberries. My absolute favorite part of the class was learning the science behind getting the choux pastry to rise correctly, and of course, getting to taste our delicious creations at the end. I walked away with new baking skills, great recipes, and a lot more confidence. I highly recommend taking Valerie's class to anyone looking to master classic French desserts!
