Nicole is passionate about bringing people together through nourishing, wholesome food. As a qualified retreat chef, she specialises in creating vibrant vegetarian and plant based meals that fuel both body and soul, as well as leading hands-on sourdough workshops, sharing her love for the art of fermentation.

With certifications from the Institute for Integrative Nutrition (IIN) and Bettina’s Kitchen Retreat Chef Academy, Nicole has dedicated her career to health, wellness, and mindful cooking and sourdough baking.

She founded Bernie’s Bakehouse in 2020, a micro bakery born out of a love for artisan sourdough and nourishing home-cooked meals. Since then, she has worked as a private chef across the world, catering on wellness retreats and intimate home gatherings, as well as guiding others in their journey through her sourdough and healthy eating workshops, which she runs regularly in North London.
