In this intro to lactic fermentation class, you’ll learn all about this traditional style of vegetable fermentation, particularly focusing on how to make use of glut vegetables. We’ll define fermentation, wild fermentation, and lactic fermentation specifically, as well as the health benefits fermented foods bring to your diet.
During the core part of our course, we will apply theory to practice, making three different styles of lactic ferments and applying the core principles you’ll need to grasp in order to ferment safely and effectively. We will look at the mixed vegetable escabeche, beetroot kvass, cabbage and beet pelustka, and dill gherkins, and we will make three of those, which you’ll get to take home to care for as they bubble and ferment away, following our careful instructions.
Throughout the course, we’ll provide you with alternative tips and recipe inspiration for you to tailor your practice to your personal environment and taste. We’ll also encourage you to use your senses in order to develop your “fermentation intuition, ” helping you to master any recipes you come across.
The course includes a selection of fermented snacks midway through.

No previous experience or knowledge is required.
What to bring
We ask participants to bring 3 glass jars and a carrier bag or other suitable bag (Kilner or Fido type jars are best, but you can use any jar), as this helps us to keep the cost of the course down and encourages the re-use of old jars.
Medium-sized jars are usually best for most people. We will be making 300-400g recipes, but you need to leave some headspace between the jar contents and the lid, not bigger than 500ml. Also, you will probably want to use the jars after the initial batch to make your own ferments at home, so you may want to buy jars big enough to suit you and your family's needs. It is always better to have a jar that is too big rather than too small.

The Fermentarium is an independent organisation dedicated to promoting the small-scale production of “real” fermented food and drink. The adventure began in 2014, beginning with sourdough bread and pizza making.
Owners, Simon and David, wanted to share their knowledge and experience with others and started running lactic fermentation classes. Eventually, they were joined by Anna in 2016 and added further classes to their repertoire including kombucha, soft fermented drinks, cultured condiments and dairy ferments.
They run interactive and exciting classes that share the love for fermented foods with others. Whether you're a newbie or well experienced, anyone can join. Corporate events and private courses can also be catered for.
