My passion for baking started almost two decades ago as a late-night passion project. While balancing a demanding full-time career, I spent my evenings and weekends perfecting my craft in my home kitchen—tackling everything from delicate, intricate cupcakes to bespoke wedding cakes. Baking became my ultimate creative outlet, a way to bring sweetness and celebration into people's biggest milestones.
The real turning point came after the birth of my first child. It gave me the clarity and motivation to step away from the traditional routine, take a leap of faith, and turn my passion into a full-time business. That journey reached its ultimate milestone in 2020, when I officially opened the doors to our physical home, Vanilla Ice Cakes, in the heart of Chorlton.
Teaching naturally became the next step in my journey. There is something truly magical about demystifying an art form that often feels intimidating to people. I love watching students walk in feeling unsure, only to leave hours later carrying a beautifully finished, professional-grade creation and a newfound confidence in their abilities.
With nearly 20 years of hands-on experience under my belt, I’ve had the privilege of hosting hundreds of masterclasses right here in our Chorlton studio. One thing most people don't realise about sugarcraft and cake design is that it is equal parts art and engineering—it requires precision, patience, and a deep understanding of structural balance, all masked beneath delicious flavours and elegant finishes.
