Cooking with fire is one of the oldest, most primal ways of enjoying food, and this cooking class will teach you how to enjoy these delicious methods all year round. From setting up your equipment to making a variety of spice rubs and aromatic additions, you'll gain a deeper insight into cooking, improve your relationship with food and inspire your kitchen creativity.
Under the watchful eye of your talented teacher, you'll begin by learning how to set up and light a fire pit, a clay oven and many different types of BBQs and smokers, using charcoal and wood from the Forest of Dean and Herefordshire. As this is a seasonal class, you'll be working with a variety of different ingredients and recipes depending on the time of year — examples include smoked feta, rubs, cooking mutton joints, BBQ vegetable selections, jointed chickens, lamb kebabs, stuffed flatbread, even a whole Christmas feast!
No matter what's on the menu for the day, you'll learn how smoke and fire can impart their unique flavours and characteristics to your food, elevating even the simplest dishes to incredible heights. At the end of the class, you'll gather round the fire with your fellow students to enjoy what you've made together — the perfect end to a unique cooking experience.

  • 5/5 from Stuart Aldridge, attended Sep 2026: What an absolutely brilliant afternoon! Probably one of the best things I’ve done this year! The chef leading the session was spot on. His knowledge was fantastic, but more importantly, he had a great way of explaining everything and making it really easy to understand. There were loads of great little tips and tricks throughout the afternoon, from managing temperatures to getting the best out of the different grills and cooking methods. And the food… sublime! Everything we cooked was absolutely delicious. The workshop itself was nice and intimate with only eight people, which made it really relaxed and enjoyable. And, of course, getting to play with the flamethrowers was 100% my favourite part! If you enjoy food, cooking, or just fancy doing something a bit different, I’d highly recommend giving this a go. Great food, great atmosphere, loads to learn and plenty of fire! 10/10 from me. I’ll definitely be back!
  • 5/5 from Charlie Rossiter, attended Jan 2026: Fantastic experience at a relaxed pace and great atmosphere. Hands on enough, Joe was very informative and happy to share his wealth of knowledge. Multiple cooking techniques and a bit of butchery, the quality and quantity of the ingredients were well above my expectations. Overall I would highly recommend this experience.
  • 5/5 from Eleanor Anne Aston, attended Jan 2026: Extremely good fun, the class was very informative and the food was delicious. Chef Joe was a great host and teacher, he was both entertaining and knowledgeable - what he doesn’t know about cooking with fire probably isn’t worth knowing. Would definitely recommend.
  • 5/5 from Tony Long, attended Aug 2025: What a great few hours cooking on fire! Chef (Joe…I think!) was great, entertaining and very knowledgeable. We cooked some steak with different sauces, tasted smoked cheese(the feta was great!), roasted tomatoes and lemons. Then had a massive feast! Followed by an amazing baked cheese cake which was already prepared, with smoked cherries! I honestly could have spent all day there but would have definitely drank more beer!! All in all a really enjoyable course and great value for money!
  • 5/5 from Elaine Aldington, attended Mar 2025: Excellent day. Great Chef and supportive team. Over and above what we expected and feel super confident to cook with fire! Thanks Harts Cookery Team...we loved it!
