This hands-on experience will start with mastering essential knife skills, including boning meat, filleting fish, and perfecting vegetable cuts, setting the foundation for the rest of the day.You'll then put your new skills into practice by creating a stunning 4-course taster menu, which includes:
- Appetizer: Home-smoked trout and carpaccio of salmon timbale, served with lime-cured ribbons of courgette.
- Starter: Crispy skin fillet of sea bream on pernod-braised fennel, with delicate asparagus shavings and a parmesan crisp.
- Main: Ballotine of chicken stuffed with wild mushrooms and truffle, complemented by pomme mousseline, basil and rocket puree, crispy chicken skin, and a drizzle of toasted hazelnut oil.
- Dessert: Oeufs à la neige with a delicate caramel cage.
