What to expect:
  • Learn how to make bao dough, including yeast activation, kneading, and proofing techniques.
  • Understand the science behind fermentation, temperature control, and getting the light, fluffy texture.
  • Prepare both folded lotus-leaf buns and filled bao buns.
  • Make a selection of fillings including sticky char siu pork belly and crispy teriyaki tofu (V).
  • Prepare accompaniments such as smashed cucumber pickle and scratch-made sriracha mayo.
  • Learn shaping techniques for different bao styles, including pleating and folding.
