In this Seafood of Tuscany class, you will learn from celebrated international chef, Davide Cerretini, who will guide you through the process of creating delicious seafood dishes inspired by the beautiful region of Tuscany. This is not just about an opportunity to cook and learn; it's also a chance to meet a chef whose unique story has had a huge impact on the hospitality industry in the USA. A larger than life character known for his humor and innovative thinking, his classes are always entertaining, informative, and one-of-a-kind.

Throughout the class, you will discover the secrets of preparing and cooking fresh seafood, using authentic Tuscan techniques and flavors. From selecting the best ingredients to learning how to clean and prepare various types of seafood, you will gain the knowledge and skills needed to create mouthwatering dishes at home.

You'll learn how to make:

  • Cozze al Tramonto - Baked fresh mussels with San Marzano tomato sauce and eggs.
  • Risotto Al nero di Seppia e Funghi - Black squid ink risotto with calamari and mushrooms.
  • Gamberi al Miele - Fresh prawns flambe' with honey-brandy glaze and Peperoncino.

All the essentials for this class are provided, so there's no need for you to bring anything except a notebook and pen if you'd like to take notes. Ingredients, a glass of carefully paired, high-quality wine, and a complementary glass of Prosecco when you arrive are included, but feel free to bring any additional drinks or extra bottles of wine that you'd like.

The classes take place in a welcoming private residence right in the heart of the picturesque town of West Malling, Kent. The area is beautiful to visit for the day if you'd like to come early and stroll around the charming medieval town or visit nearby Leeds Castle. There is a train station 12 minutes' walk from the house with direct trains from Victoria, Waterloo, or Charing Cross (approx. 50 mins travel time), but there is also plenty of paid parking in the streets nearby with driving from central London taking around an hour.

To start the session, we'll welcome you with a lovely glass of Prosecco. During the class, you'll be learning, sipping a beautiful Italian wine, and eating the food that Chef Davide will explain and show you how to make. After the class, you'll receive an email copy of the recipe, allowing you to recreate your culinary creation at home.

By the end of the class, you'll not only have mastered the art of preparing seafood, but you'll also have a collection of delicious recipes to take home and impress your friends and family with. There are frequent, direct trains from Waterloo, Victoria or Charing Cross that take around 50 minutes. The train station is a 12 minute walk from the house, or there is paid and free parking in the streets around town.

Your teacher can also travel within 10 miles of West Malling, to a venue of your choice for a private class

Hi, my name is Davide Cerretini, also known as 'The One Star Chef'. I'm a native of Tuscany and spent the last 30 years in Los Angeles and San Francisco, where I had a long career as a chef and restauranteur. I have experience in the entertainment business, as I have appeared in TV shows, such as The Daily Show with Trevor Noah, starred in a movie, as well as being interviewed countless times across radio and TV internationally.

The food I cook is 100% authentically Tuscan, learned from my family growing up in the countryside of Italy. Throughout my career I have focused on preserving the flavours and ancient techniques of that region without compromise. I am very passionate about the stories behind the dishes and how simple ingredients prepared in the right way can be so much more satisfying and flavourful than elaborate and complex recipes.

My classes are relaxed, humorous and full of storytelling. You will learn tips and tricks that I picked up while growing up in Tuscany, and never forgot.
I love to share my secrets with beginners, but also with more skilled chefs that haven't had the opportunity to experience the unique way of cooking that you only find in Tuscany.

My goal is to create a friendly atmosphere with relaxing interaction, all orbiting around delicious food, wine, stories and learning.
