The Carnival of Taste is a vibrant and exciting cooking workshop that celebrates the authenticity and flavour of South American cuisine. We hope to be able to do this fantastic continent justice, highlighting its incredible culture and history of food. From Brazilian feijoada, Argentine asado, Peruvian ceviche, to Colombian arepas.
This session is hosted by one of our three resident chefs.
On the menu:
  • Feijoada – Feijao, translating simply as black bean, is a rich stew made predominantly from the unused parts of the pig, i.e. feet, ears, as well as other smoked meats for that depth of flavour.
  • Ceviche – A dish served at the Fiestas Patrias, this summer dish has all the vibrance of Peru itself.
  • Asado chicken – A dish originating from the Gauchos, asado traditionally cooked with beef, is a tremendous feat of cooking.
  • Corocao de frango – These little offal bites are truly amazing. Cooked right, they will pack such incredible flavour.
All the session’s recipes are provided for you to take home to add to your personal repertoire so you can keep on cooking them time and time again.
At Leeds Cookery School, we aim for our guests to take home a combination of newfound skills, knowledge, and a memorable experience that enriches their culinary curiosities and encourages them to explore and enjoy food in new and exciting ways.
At the end of our workshops, we encourage our guests to relax and enjoy tasting the fruits of their labour and share the experience with their fellow participants.

Leeds Cookery School donates 100% of its profit to Zest, a local Leeds charity supporting people living in disadvantaged areas of the city. Zest carry out a large number of projects including running social clubs, helping families to access food in the school holidays, developing cooking skills and lots more in between!
Across our range of classes, courses and events at Leeds Cookery School our teachers promote and talk about seasonal ingredients, local sourcing and the importance of eating ethically and sustainably. Our ingredients are sourced from Yorkshire and are sustainable wherever possible and we always use free-range eggs. We order small quantities to minimise wastage and always consider the food miles travelled by our ingredients.
As well as donating profits to Zest, Leeds Cookery School has committed to running affordable cooking activities throughout the year, in partnership with Jamie’s Ministry of Food Leeds and Zest’s Community Development Team. These sessions enable low-income families and vulnerable people to access basic cookery skills and cookery clubs that address social isolation.
