This online course is led by two smallholders who want to help those who want to make sourdough bread in a way that fits with their everyday, busy life (everybody deserves delicious homemade bread!). While you'll learn all about the science and technicalities of sourdough, this online course is all about making simple, delicious bread that you can make as and when you need it.

Over the course of two on-demand virtual classes, you will learn the basics of sourdough bread baking, and importantly, how to get it to work with the chaos of everyday life - because the best bread is the one that you actually make!

The first lesson will be based on your course teacher's go-to sourdough recipe, you will spend time honing this basic recipe before going on to some tips and recipes for using sourdough in other recipes and making a bread recipe of your own.

Don't worry if you're a beginner baker, from troubleshooting your starter, giving you tips for maintaining a starter to using your starter when you don’t want to make bread - with this simple online course, you really will learn it all! The lessons are broken down into two sessions - in the first lesson, in the afternoon, we will mix and start our bread, as well as learn the basics of sourdough bread making. In the next morning's optional class, we will bake the bread together.

What you'll get in your craft kit
  • Mildred the sourdough starter
  • Detailed instruction booklet with 10 great recipes for bread as well as some for using your starter when you don’t feel like making bread
  • 1 x Banneton (or proofing basket) to get beautiful shaping in the oven
  • 1 x Bowl scraper
  • 1.5kg of organic strong white flour grown and milled in East Lothian from Mungoswells Malt and Mill
  • Razor for scoring
  • Piece of parchment paper

If you choose not to buy a kit, you will still be sent a piece of our sourdough starter, Mildred, with instructions for getting her ready to bake with on the day.
What you'll need
All Participants: Ideally, your bread will be baked in a cast iron/enamel casserole dish/ Dutch Oven (like a Le Crueset pot) or other lidded pot in your oven. You will also need water, salt, a cowl and utensils for mixing your bread.

If you haven't purchased a kit, you will need:
  • 1kg of strong bread flour
  • 500g of water
  • 20g of salt
  • A colander or banneton, lined with a tea towel

We are Kat Goldin and Kevin Harrison, smallholders who believe in the transformative power of doing. We moved to our small farm about 5 years ago- adding dairy goats, sheep, a KuneKune pig, chickens, ducks, geese, cats, and a rather dapper peacock named Major Tom to the mix. We grow and make most of our own food and love to share that passion with other people. Kat is an author and photographer who specialises in craft and DIY how-to books, online courses and events. From the farm studio, she hosts popular workshops and weekend-long retreats on crochet, sourdough bread making, cheese making, foraging and supper clubs. Kevin works off-farm as an arts manager working with schools, hospitals and prisons to provide participatory arts experiences.

We run a number of events and experiences here at the farm - focussed on practical skills to “do it yourself”. The “IT” can be anything really - from raising your own goats, making your own sourdough bread or cheese, foraging, crocheting, soap making, spoon carving, natural dyeing, the list goes on. We believe in the power of regenerative farming, permaculture and rolling up your sleeves and getting stuck into your own life - whether its a small farm like ours or a flat in an urban centre.
