If you're keen to try something different to add to your recipe repertoire, join renowned chef Norman Musa and learn the techniques of cooking authentic Malaysian dishes at this cooking class in London. This hands-on masterclass is tailored for Malaysian food lovers and uses the best quality fish and seafood from the Billingsgate market in London.

Throughout the workshop, Norman will guide you step-by-step, ensuring that you feel confident and comfortable with the techniques and ingredients you're working with. The class will be a mix of hands-on cooking and demonstrations, allowing you to see the dishes come to life before your eyes.

Menu:

  • Seared Scallops -- Pan fried scallops made with dressing made of garlic, chilli, palm sugar coriander and Thai basil.
  • Squid, Artichoke and Pineapple Stir-Fry -- Beautifully scored squid pieces stir-fried with artichoke and pineapple chunks seasoned with turmeric, chilli, vinegar and herbs.
  • King Prawn and Mussel Laksa -- Vermicelli noodles in aromatic laksa broth cooked with king prawns, mussels, pak choy and bean sprouts (from Amazing Malaysian cookbook).
  • Sea Bass with Asian Dressing -- Steamed sea bass fillets made with dressing of Asian herbs (from Bowlful cookbook).

Born in Penang, Malaysia, Norman moved to the United Kingdom in 1994 to study Construction Management (Quantity Surveying). After graduated with Honours, he worked as the surveyor for 9 years before switching his career to a full time chef. His first restaurant was opened in Manchester in 2006 and York in 2012, followed by two more in Malaysia in 2014 and 2016.

​In 2010, Norman joined Formula One Lotus team as the race chef which embarked his vision to promote Malaysian cuisine to the world.

​Hailed by CNN as one of Malaysia's most famous exports, he was featured in Masterchef Malaysia, BBC’s Tom Kerridge Best Ever Dishes and Channel 4’s Sunday Brunch and has been on numerous magazines in UK and Malaysia.

He teaches Malaysian and South-east Asian cuisines at the top cookery schools in the UK and Netherlands, as well as being the co-creator and tutor for Wagamama Chef Academy training and inspiring young Wagamama chefs into panAsian cuisine.

Norman is a wonderful teacher, with lots of tips to cook seafood well. The food was delicious, my favourite were the scallops.
The only problem was the air conditioning seemed to be stuck on freezing cold. There were no staff around to help. It did spoil the day.
