This live online course is the best way to get started on your fermented tea journey. You'll learn everything you need to know about ingredients, equipment, and fermentation techniques, as well as how to look after your SCOBY and how to store your homemade kombucha.
Your talented teacher is there to give advice and help you through the kombucha brewing process so you can achieve good carbonation and balanced flavours.

What to bring
  • 1.5 litres filtered or bottled water.
  • 1 kombucha scoby.
  • 150 ml starter liquid (usually the culture comes in a liquid - do not discard it!).
  • 100 g unrefined cane sugar (preferably organic).
  • 1 green tea bag (preferably organic).
  • 1 black tea bag (preferably organic).
  • 2 litre glass jar (can be reused).
  • 1 rubber band.
  • 1 clean cotton kitchen towel (or other tightly woven piece of cloth to cover the mouth of the jar).
  • Set of glass bottles with lids (can be reused with swing tops or screw tops).
  • Any fruit, herbs, spices for flavouring the secondary fermentation.

The Fermentarium is an independent organisation dedicated to promoting the small-scale production of “real” fermented food and drink. The adventure began in 2014, beginning with sourdough bread and pizza making.
Owners, Simon and David, wanted to share their knowledge and experience with others and started running lactic fermentation classes. Eventually, they were joined by Anna in 2016 and added further classes to their repertoire including kombucha, soft fermented drinks, cultured condiments and dairy ferments.
They run interactive and exciting classes that share the love for fermented foods with others. Whether you're a newbie or well experienced, anyone can join. Corporate events and private courses can also be catered for.
